{{Breakfast For Dinner}} Aldi meal | Loaded Breakfast Skillet

Cheese, potatoes, bacon and eggs: Is there anything better than these four items mixed together!? No? I didn't think so! 



Below the recipe, you will find a shopping list with prices. Please note that the prices will vary from store to store. The prices that I post are for my local Aldi's. Also,The shopping list below will include packages of some items that can(possibly) be used for other meals as well. So, the prices for these meals will be a little cheaper than the total price that I post and will be without tax added because tax differs from state to state.

{{What You Need}}
4 potatoes cut into cubes
8 strips of bacon
1/2 onion chopped
1/4 C. Water
1 teaspoon minced garlic
4 green onions, chopped
1/2 teaspoon paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground 
black pepper 
8 eggs,scrambled
2 C. Shredded cheddar cheese

{{What You Do}} 
1. Chop potatoes into small cubes, about 3/4"-thick.
2. Place a large nonstick skillet over medium heat. Add bacon and fry until crispy. Turn off heat and transfer bacon to a paper towel–lined plate. Keep most of the bacon fat in skillet, removing any black pieces from the bacon.
3. Turn the heat back to medium and add onion to the skillet. Sauté, stirring occasionally until onions begin to soften. Add potatoes and toss until evenly coated in bacon fat. Pour in water and cover skillet with a large lid. (This helps speed up the cooking and prevent burning.) Cook until the potatoes are tender, about 20 minutes, checking the potatoes occasionally. If they start to brown too quickly, remove the lid and add more water.
4. In another skillet scramble 8 eggs, when fully cooked take off of heat and set aside.
5. When the potatoes are tender, remove lid and stir in garlic, green onions, and paprika. Season with salt and pepper to taste. Using a wooden(or silicone) spoon, mix in scrambled eggs. Serve warm, top with sour cream & enjoy!

4 green onions, sliced($0.59 for a package)
1 teaspoon kosher salt (Already had at home)
1 teaspoon Freshly ground black pepper (Already had at home)
8 eggs - (1 dozen) $0.79
2 c. shredded Cheddar - (16oz package) 
$2.991 tsp. paprika - (Already had at home)

Total(more or less depending on ingredients you already have at home): $9.34 + Tax
